To hold a workshop on Fats, Oils & Oilseeds Analysis in Rio de Janeiro, in order to disseminate IUPAC's activities in the field of oils and fats, to present recent advances in lipid chemistry and show links between IUPAC and important organizations such as Codex Alimentarius, ISO and FOSFA.

Description:

Brazil has been for many years one of the biggest oilseed producers and has a big agroindustry, centered on producing and processing vegetable oils. Apart from that, Brazil is also an important source for numerous native oils with potential food or industrial applications, many of them still not appropriately investigated.

IUPAC's Commission on Fats, Oils and Derivatives (now merged within VI.5) has been active for a few years and its activities have been mainly the production of standard methods now in its 7th edition.

IUPAC's activities and products are not well known to the Brazilian vegetable oils sector. The proposed workshop represents the first attempt to change this situation and will be the first one sponsored by IUPAC in Brazil in the area. Thus, it will be a tremendous opportunity to spread IUPAC's work to all professionals related to the chemistry and processing of animal and vegetable fats and oils, as well as to chemistry students who may go to research and/or to work in the oils industry.

Progress:
The preliminary program of the workshop includes a presentationon IUPAC's role including the task force system, followed by severalconferences on technical themes that lead to standardisation ofseveral methods such as polar compounds in frying fats, NMR in lipidchemistry, adulteration of cold pressed oils with refined oils,determination of minor compounds, trans-fatty acids, stressing theuse of analytical techniques such as HRGC, HPLC, NMR and minimisationof methods to meet environmental request. In parallel, some firmswill exhibit their equipment relative to lipid chemistry and qualitycontrol. Printed material of the lectures presented in the workshopwill be available to the participants.
